Description
This will be our third year offering this Guatemalan coffee from the spectacular estate Finca El Pilar, located outside of the city of San Juan Sacatepéquez.  Most of the estate is actually a forest preserve, with only about a third of the land planted in coffee. 

The estate is located about and hours drive to the northwest of Guatemala City, and touches elevations of nearly 2000 meters above sea level.  Through as the quetzal flies, El Pilar is not all that distant from the famed coffee farms of the Antigua valley, the flavor profile is distinct. Year after year we've found this coffee to be a perfect representation of the fall with a signature spiced apple sweetness.

The farm is undergoing a time of renewal where the coffee trees are pruned back to allow new growth to flourish. Highwire is lucky to claim a significant amount of this years' harvest, through an ongoing relationship with exporters San Miguel Coffees.

Complex and sweet, we're finding cherry, fig, the aforementioned spiced apples, and a chocolate character that reminds us of red velvet cake. A coffee with something for everyone!
