Huye Mountain Natural, Rwanda

Strawberry? In coffee? You'll have to smell it to believe it, but this lot of coffee from the Huye District of Rwanda, is a natural process coffee, meaning the fruit of the coffee plant is preserved on the seed throughout the drying process.  This method, when done right, can impart a pleasantly fruited flavor that carries through in roasting and brewing.  The resulting cup is aromatically reminiscent of strawberry.  In roasting this coffee, we have aimed to balance the fruit with enough roast to bring out a sweet, milk chocolate character in the body.
