We embrace the role of our roaster, Izzy Fraire, as he highlights the essential parts of creating an outstanding cup of coffee. Although, everyone at Highwire plays a part in presenting what has been intended in the finished brew. We like coffee that is clean, has guts, sweetness and lively acidity/origin character in harmonious balance. When a particular coffee calls for it, Izzy shows restraint with the roast to preserve delicate flavors or aromas. The overall key for us is finding balance. All of our coffees are roasted in small batches on our UG-22 Probat on Mondays and Thursdays.
