This is our third year offering this very special coffee from Bolivia, produced by 24-year-old university student and coffee professional, Yulissa Chambi.
Yulissa's family's history with growing coffee in Bolivia's Yungas regions goes back more than 50 years. During the pandemic, Yulissa, along with the help of her brother Felix Chambi, planted a new generation of Catuai variety coffee on 10-acre section of the family farm. Using novel fermentation techniques to coax incredible flavors from the coffee, Yulissa offers a washed version of her coffee, as well as this natural.
This is not your typical natural! Though there are certainly some brighter fruit tones, we're getting a pleasant tartness in the flavor, akin to pomegranate, with citrus, over a layer of cocoa.
